In this edition of Community Update, we’re excited to spotlight Base Restaurant in our Food & Drink section as the recipient of our Commitment to Excellence Award.
Winners of Travellers’ Choice on Tripadvisor, Base is a contemporary restaurant holding one AA Rosette set in the beautiful surroundings of Ford Park in Ulverston.
Proudly championing Cumbrian produce, meet your chef Mark Satterwaite, a passionate chef who featured on MasterChef the Professionals in 2018. Mark has used his experience of working in a variety of kitchens within Cumbria to get to know local farmers and suppliers that strongly influence the Base menu.
“Creating a restaurant with as close to zero waste as possible and limiting food miles at every opportunity is really important to me. Having worked in kitchens for many years, it was a goal of mine to bring good quality, locally sourced food at more accessible rates. We wanted to create an offering that fell somewhere in between good quality gastro pubs and Michelin star restaurants as we felt there was a gap in the offering of the local area.
We work closely with local suppliers to select ingredients which showcase the best Cumbria has to offer. Seasonality of ingredients is a high priority for Base, we allow the produce to dictate our menu offerings rather than the other way around – ensuring we are using the produce at its peak to deliver the best flavours possible,” stated Mark.
Since Christmas, Base has introduced the NEW Steakhouse menu, which is on offer throughout the daytime and evening. Featuring a constantly changing butchers block of high-quality local produce, the new menu includes steaks, pork, lamb as well as vegetarian and vegan options.
“Everything is sourced by us, made in house and cooked from scratch. Base boasts the ability to cater for all dietary requirements, making high-quality food available to all. The Steakhouse menu will continue throughout the year alongside our tasting menu (first weekend of every month). We look forward to welcoming customers old and new whilst always championing our local produce,” said Mark.
Gaining an AA Rosette was a personal milestone for Mark and the team: “To have gained and retained the AA Rosette for three years is an honour and is testament to an excellent team and a career filled with hard work and determination,” added Mark.
Base also offer many food-led intimate wedding packages, working closely with each couple to develop a bespoke menu that reflects them and is enjoyable for all guests.
