In this issue of Community Update, we are pleased to award D. Gilmour Butchers for its Commitment to Excellence.

D. Gilmour Butchers, a family-owned business nestled in the heart of the Highlands in Badenoch, has been serving the community for over 30 years. Nine years ago, Donald took the helm, ushering in a new era of modernisation. Under his leadership, the business has been rebranded and revitalised, enhancing both its appearance and production processes. By incorporating top-of-the-line products and cutting-edge technology, D. Gilmour Butchers continues to uphold its commitment to quality while embracing innovation.

“We pride ourselves on sourcing locally where possible especially our lamb and mutton both of which are sourced only 5 miles away from the shop,” stated Donald. “We like to engage with the buyers at auction to get the animal we require, this ensures we get the highest-quality, and that the farmer also gets the best price too. What’s more, it is important to point out to customers that we produce all our products in house. This ensures consistency and transparency in everything we do.”

From bacon and steaks, to poultry, sausages, offal, pies, highland game, burgers, and much more, D. Gilmour Butchers produces the highest-quality meat products. So much so, one customer harped about its Black Pudding as ‘The Best Black Pudding in the world!’ When reading this review, we had to ask Donald what makes his black pudding recipe so popular, and how his fresh approach to business differs to other butchers in the area.

“Our Black Pudding recipe has been handed down for over 60 years. Our customers from all over the UK enjoy getting their fix as we can deliver to anyway in the country via Royal Mail.

As for the business, the future of traditional Butchery varies from each part of the country. In rural areas it is becoming harder to recruit employees due to more transient population. Succession planning is key to a business surviving and more and more owners are open to fresh ideas on this. My experience is that females are more interested in becoming butchers than men.

Also, trends in what a consumer looks for are steadily shifting towards ready meals which we prepare on the premises, and is now an integral part of any butcher’s repertoire. Traceability of all products and proteins used is also high on consumers questions. In line with this, we ensure all our production processes and products meet these demands and more.”
